2 medium yellow summer squash, sliced (about 5 cups)

2 medium zucchini, sliced (about 5 cups)

1 can (14 to 19 ounces) red beans or kidney beans, rinsed and drained

1 bag (16 ounces) frozen corn kernels

1 bag (16 ounces) frozen baby lima beans

1 can (8 ounces) sliced bamboo shoots, drained

1 can (5 ounces) sliced water chestnuts, drained

1/4 c. water

1/2 tsp. ground cumin

salt

ground black pepper

1 c. reduced-fat shredded monterey jack cheese

1/2 c. chopped fresh cilantro

  1. Preheat the oven to 350°F.
  2. In a large, deep skillet or Dutch oven, combine the squash, zucchini, red or kidney beans, corn, lima beans, bamboo shoots, water chestnuts, and water. Cover and bring to a boil over medium-high heat. Reduce the heat to medium and cook, covered, stirring occasionally, for about 15 minutes, or until the squash and zucchini are tender and the frozen vegetables are warmed through. Drain. Stir in the cumin and season to taste with salt and pepper.
  3. Transfer the vegetable mixture to a large, shallow casserole dish and top with the cheese. Bake for 10 minutes, or until the cheese has melted. Sprinkle with the cilantro before serving.
